WHAT DOES THAT MEAN?

Our cattle are raised the way nature intended . . . free to roam the range and eat good grass. But there is more to the formula. “Grass fed” beef does not always insure quality.  Our high mountain ranch provides a rich buffet of forage which includes Blue Gramma, Red Top, Clover and Timothy grass which finish the cattle to a body condition that delivers the finest grass fed beef available anywhere. Cattle that are content mature and finish slowly without requiring antibiotics, ionophores, artificial hormones or grain.

YES...BUT HOW DOES IT TASTE?

Beef has to taste great when it hits the plate! No matter how good the story is told, our final proof is the delighted response we receive from our satisfied customers that have been eating V Bar Beef for fifteen years. It has also been served by the most discriminating chefs in the finest of restaurants.

SPECIFICALLY...WHAT MAKES GRASS FED BEEF BETTER OR DIFFERENT?

Grass fed beef is simply healthier and better tasting than grain fattened beef. It is also richer in Omega 3 fatty acids and has less seam fat, which makes the meat highly flavorful and tender. It is important to know where and how your beef is raised and that every bite contains only natural ingredients that nature intended us to have.

WHAT ABOUT QUALITY CONTROL ON THE RANCH?

It is essential to start with quality cattle. The Colorado State University Hereford Study states, “ . . . Hereford cattle are consistently rated superior to the USDA beef, regardless of grade in tenderness, juiciness and flavor . . .” Hereford cattle also have the hardiness and fleshing ability to thrive on ranch grass at an elevation of 9,000 feet. The ranch manager, Elin Rusher, is a third generation family rancher with 30 years experience in raising beef. Elin earned a degree in Animal Science from Colorado State University and with her “hands on” experience has the knowledge to hand pick the cattle when they are ready for harvest. She also ensures that they are humanely and safely handled.

V Bar Beef offers free-range, grass fed hereford beef raised without artificial growth hormones or ionophores; Fed no Antibiotics. Westcliffe, ColoradoWHAT ABOUT QUALITY CONTROL IN PROCESSING?

V Bar Beef is processed at a USDA inspected packing plant. A process called “Rinse and Chill” is used to insure the safety and shelf life of the beef. Frozen beef is only as good as the packaging. Our years of experience have proven if the beef is shrink wrapped in a non-permeable specialized freezer film, the beef has a remarkable two-year storage life.
